Cooking Planit And Colavita Eat Fresh Challenge – Week 2

Remember how I started the Cooking Planit and Colavita Eat Fresh Challenge last week {see this post}? Well I am now on to week 2 of 3! I must say that while I usually cook a few times a week for my family or guests, I don’t always follow a specific recipe… it’s more of a ‘make what’s in the fridge’ sort of deal. So while I thought following a meal plan with specific recipes would be time consuming and tedious, it’s actually been really easy and so much more interesting and exciting in my kitchen-  especially for my husband because he gets a change from our usual repertoire! I also love that I have been trying new ingredients, one of which is Colavita Garlic Cooking Oil, which will be my new ‘go-to’ for dishes that require garlic!

Last week my favorite dish was the Cauliflower Fried Rice {see a pic on my Instagram and find the recipe here}. I was shocked that by putting cauliflower into a cuisinart it would end up with something that looked and tasted like rice! It was such a healthy swap for a common unhealthy dish!
